chicken and rice casserole

One of my favorite chicken recipes ever is this Chicken and Rice Casserole.  It's five ingredients and super easy to make.

What You Will Need:
1 cup uncooked white rice
1 (10.75oz) can condensed cream of chicken soup
1 7/8 cup of water (I eyeball it)
1 (1oz) package dry onion soup mix
4 skinless, boneless chicken breast (I sometimes use more, Travis likes meat!)

Preheat oven to 350 degrees.

Spread white rice on bottom of 9x13 baking dish.  Rise thawed chicken and then lay on top of rice.  Mix soup and water together, pour over chicken and rice.  Sprinkle dry onion soup mix on top.  Cover and seal tightly with foil.  Bake for about an hour and a half.

Enjoy!

I made Charlie an Oreo Bundt Cake for his 2 birthday.  Y'all, it was so so good.

What you will need:

2 small boxes of instant chocolate pudding
1/2 cup of vegetable oil
1 1/4 cup water
4 eggs
1 can vanilla frosting
1 package of oreos

Preheat oven to 350 degrees.

Grease pan.  Mix together cake mix, puddings, oil, water and eggs with electric mixer.  Pour into bundt pan.  Bake 40-45 minutes.  Let cake cool down the transfer from pan to serving dish.  While can is cooling, mix together icing and crunched oreos.  Keep a few oreos for the top {if you choose}.  Frost cake.

mexican casserole

This is a yummy Mexican Casserole recipe!  I got the recipe from MMM but did a few things differently.  It was delicious and feeds four.

Whatcha Need:
1 pound meat (I used turkey)
1 onion, chopped (I used frozen)
1 tsp minced garlic
1 tbs chili powder
1 can (14oz) black beans
1 can (14oz) diced tomatoes
1/2 cup frozen corn
1 cup pasta
1/2 cup salsa
4-5 tortillas, (I used wheat)
1 cup cheddar cheese, shredded

Preheat oven to 375 degrees

Put meat and onions in pan.  Brown.  Add garlic and chili powder. Let cook for about 5-6 minutes.  Add beans, tomatoes, corn, pasta sauce and salsa.  Cook until bubbly.  I used a circle glass dish and sprayed with Pam.  Add one tortilla shell to the bottom.  Add meat mixture and top with cheese.  Continue with layering pattern until meat mixture is out.  Top with cheese, cover with aluminum and toss in the oven.  Cook for about 30 minutes covered.  Uncover and let cook for about 5-10 more minutes.

Enjoy!!

meatball parmesan sub

Sandwiches are a favorite at our house and I'm slowly loving meatballs more and more.  So this recipe was a perfect combo.  This recipe is from my Life as a Mrs.

Whatcha Need:

For the meatballs:
1/4 cup plain breadcrumbs
1/4 cup Panko breadcrumbs
1/2 cup milk
2 lbs beef
1 egg
1 clove garlic (I used minced)
1 tbs dried parsley
2 tsp garlic salt
2 tsp onion powder
1 tsp dried basil
1 tsp dried oregano
1/2 tsp black pepper
1/2 tsp crushed red pepper flakes
1/3 cup Parmesan cheese

For the Marinara Sauce:
3 tbs olive oil
1 onion (I used frozen)
3 cloves garlic (I used minced)
1 box of Pomi strained tomatos (We could not find these at our Kroger, got regular tomatos)
2 boxes Pomi chopped tomatos (We couldn't find, used regular)
3 tsp salt
dash of black pepper
dash of red pepper

Add-ons:
hoagie bread
sliced mozzarella cheese

Moisten both types of breadcrumbs with milk in large mixing bowl.  Add all of the meatball ingredients except the Parmesan cheese.  Mix until it's combined nicely.  Then add in Parmesan cheese.

Turn oven on broil.  Line baking sheet with aluminum foil.  Roll out each meatball and place on sheet.  I made my fairly large.  Place in oven for about 15-20 minutes until all sides are brown.

While meatballs are cooking, heat olive oil in large pot.  Add in onions until translucent.  Add garlic.  Stir for about 1 minute.  Add tomatoes and season with salt, black pepper, crushed red pepper.  Bring to boil and then reduce to a simmer.

Once meatballs are done, add them to the sauce pot.  Stir until all are submerged.  I added extra tomato sauce to fully cover mine.  Allow meatballs to simmer for about 20 minutes.

Heat hoagies, if you prefer.  Add meatballs.  Top with sliced mozzarella cheese.  Eat and enjoy!

{I like this picture because it shows how big my meatballs are!}

white chocolate s'mores gooey cake bars

Holy Moly these things are divine!!!  So sugary sweet, will give you an instant cavity.  Check them out!!!  I found the recipe on MMM's blog but it's originally from Picky Palate..

Whatcha Need:
1 box yellow cake mix
1 large egg
1 stick (1/2 cup) butter, softened
4 1/2 full graham crackers
10 oz bag white chocolate chips
2 cups mini marshmallows
1/2 cup sweetened condensed milk

Preheat oven to 350 degrees.
Spray 8x8 baking pan with cooking spray.

Mix together the cake mix, egg and softened butter.  Mix together with hands until nice and doughy (Similar to cookie dough).  We had to add a little bit of water to ours, watch out it can get super sticky.  Press half of the dough into the bottom of the prepared pan.  Layer with graham crackers, white chips then marshmallows.  Top with the remaining half of the dough, pressing evening.  This was hard for us.  We had to dip our spoon in water a lot to get the dough to be able to spread.  It was a little tricky but totally worth it.  Drizzle sweetened condensed mile over top then bake for 28-33 minutes, until cooked through and golden brown on top!  Remove from oven.  Let cool.

Eat. Love. Enjoy!

Here is what ours looked like right before we put it in the oven..

Here is the finished product.  This picture is from Picky Palate.

chicken and black bean rice casserole

This dinner is easy and very good!  It could feed a small army, too.  My Mom and I made it together Saturday night while the boys watched football.  Perfect fall football food!!

It's another MMM recipe, I promise though I'm branching out and finding recipes other places.  But hers are just so good and easy it's hard not to keep going back!  She actually found this one on Pinterest but changed it up a bit.

Whatcha Need:
(Mom and I actually doubled the recipe to make sure we had enough, but this is the original list)
1 pound cooked chicken, shredded
4 cups cooked brown rice
1 can black beans, rinsed and drained
1 cup sour cream
1 can chopped green chilies
1 cup salsa
1 tablespoon chili powder
1 cup frozen corn
1 1/2 cups cheddar cheese, divided

Preheat oven at 375 degrees.

Combine all ingredients except a half cup of cheese to later add to the top.  Spread mixture in 8x8 in pan (since we doubled our recipe we used a larger pan).  Top with the remaining half cup of cheese.  Bake uncovered for about 20 minutes or until bubbly and brown.

Done.  Easy. Yummy. Enjoy!

mexican biscuit casserole

Y'all this recipe is de-li-cious!!  So good.  I'll admit that when I first read through it my thought was that the ingredients sounded really weird together.  My Mom is now reading MMM blog and is making some of her recipes, too.  This recipe sparked her interest also.  So, my parents came over the other night and we made it together.

Whatcha Need:
1 pound ground beef, turkey or chicken (we made 2, one with beef and one with chicken)
1 package taco seasoning
1 can chili beans
1 cup frozen corn
1 can of refrigerated biscuits
2 cups cheddar cheese, divided
Extra Virgin Olive Oil

Preheat oven to 350 degrees

Brown your meat with a little bit of EVOO, once brown stir in seasoning, beans, corn and 1 1/2 cup cheese. Put mixture in a baking dish.  Top with biscuits and then add more cheese.  Bake uncovered for 25-30 or until biscuits are brown and mix is bubbly.

Yum, yum, yum!

Enjoy!!

chimichangas and crock pot mexican chicken

Last weekend we had the Casteels over for a Mexican dinner.  I wanted something different then just tacos. I found two different chimichanga recipes on allrecipes.  I couldn't decide on chicken or beef, so I made both.  It was a little wild in the kitchen for a few minutes trying to do two new recipes at the same time but they both turned out delicious.  We voted and all agreed that the chicken was tasty but the beef was super tasty!  I also made my Mom's Crock Pot Mexican Chicken as a side.

Whatcha Need for Chicken Chimichangas:
1 1/2 cups chicken broth
1 cup uncooked long-grain rice
1/2 cup red enchilada sauce
1 1/2 onion diced (I used frozen diced onions)
6 (12 inch) flour tortillas
4 cups diced cooked chicken breath
1 pound Monterey Jack cheese, shredded
1 (6 oz) can slice black olives (I didn't add olives)
4 cups refried beans
1/4 cup vegetable oil
1/4 cup margarine
toppings of your choice

Preheat oven to 450 degrees

In a medium saucepan, combine the broth, rice, sauce, 1 onion.  Mix and bring to a boil.  Reduce heat to low and let simmer for about 20 minutes or until rice is tender.  Meanwhile, heat margarine and dip tortillas into the margarine for about 30 seconds or until soft. When rice mixture is ready, spoon equal amounts of the following onto each tortilla:  chicken, shredded Jack cheese, diced onion, olives, rice mixture and beans.  Roll tortillas, tucking in the sides and then top and bottom.  Flip over and place on baking sheet.  Cook for 15 minutes.  {The original recipes wants you to cook them in a large skillet but since I was making beef and cooking them in the oven, I did the same with the chicken).

Enjoy a yummy Chickenchanga!  =)

Now, for the Beef Chimi.

Whatcha Need for Beef Chimichangas:
1 pound ground beef
1 small onion, chopped (I used frozen)
1 clove garlic, minced
1/2 teaspoons taco seasoning mix
1 teaspoon dried oregano
1/4 cup sour cream
1 (4 oz) can chopped green chillies
2 tablespoons distilled white vinegar
1 cup shredded Cheddar cheese
1/4 cup margarine
6 (12 inch) tortillas (recipe calls for 7 inch but I had the 12 for the chicken)

Preheat oven to 450 degrees

Brown the ground beef, onion, garlic, taco seasoning and oregano in a skillet over medium heat.  Drain if need.  Stir in sour cream, chillies and vinegar until well mixed.  Remove from heat and mix in the Cheddar cheese.  Melt margarine in a small skillet over low heat.  When melted dip each tortilla into the margarine for about 30 seconds or until soft. Fill each tortilla with mix.  Roll tortillas, tucking in the sides and then top and bottom.  Flip over and place on baking sheet.  Cook for 15 minutes.

Done with both and enjoy!!

I forgot to take a picture the night of so this is a picture of our left overs the next morning.  Both mixes made enough for all four of us to have two chimichangas each.  The brown tortilla is wheat.

I also made my Mom's Crock Pot Mexican Chicken which is so delicious and always a big hit.  It's super easy and super yummy.

Whatcha Need:
As many chicken breast as your prefer
2 cans mexicorn
1 can black beans, drained
1 large jar of salsa
1 bag of tortilla chips

Throw everything in a crock pot and cook!  I normally cook mine on high for several hours and then turn in to medium at the end.  About an hour or so before eating, shred the chicken while still in the pot.

Serve and enjoy!

GJ's birthday bundt

Since I'm totally addicted to cooking now, I decided to make my Mom a delicious cake for her birthday.  It.was.ah-mazing!!  So moist. Thanks MMM for the recipe.

Whatcha Need:
1 box of white cake mix
2 small boxes of instant vanilla pudding
1/2 cup of vegetable oil
1 1/4 cup water
4 eggs
hot fudge
whipped cream
sprinkles
cherries

Preheat oven to 350 degrees

Grease a bundt pan with Pam.  Combine cake mix, puddings, oil, water and eggs.  Mix with an electric mixer.  Pour mix into pan and bake for 40-45 minutes or until toothpick comes out clean.  Let the cake cool for about 10 minutes or so.  Put cake onto serving dish.  Once cake has cooled, heat the hot fudge in the microwave for about a minute and the drizzle on top.  We then added sprinkles.  We let everyone add their own whipped cream and cherries to their individual piece instead of adding to the entire cake.

My batter tester..  She actually helped me make the entire cake.  She's a wonderful little helper.

chicken fettuccini alfredo

We love Chicken Fettuccini Alfredo at our house.  I order it often when we are eating out.  I've always wanted to make it but was never brave enough.  Until now.  It turned out good.  My parents ended up joining us for dinner and they approved.  We all agreed that it needed a little more of a kick.  I didn't use actual garlic cloves like the recipe calls for, I used garlic powder instead.  Maybe that was my problem.  My recipe is from allrecipes.com

Whatcha Need:
6 boneless, skinless chicken breast, cut into squares
6 tablespoons butter
4 garlic cloves (I used garlic powder)
1 tablespoon Italian seasoning
1 pound fettuccini pasta
1 onion, diced
1 (8oz) packaged mushrooms (I didn't add any)
1/3 cup all purpose flour
1 tablespoon salt
3/4 tablespoon ground white pepper
3 cups milk
1 cup half-and-half
3/4 cup grated Parmesan cheese
8 ounces shredded Colby-Monterey-Jack cheese
3 roma (plum) tomatoes, diced (I didn't use any)
1/2 cup sour cream

Bring a large pot of lightly salted water to a boil.  Add pasta and cook for 8-10 minutes or until pasta is soft.  In a large skillet, over medium heat, combine chicken, 2 tbs butter, 2 garlic cloves and Italian seasoning.  Cook until chicken is no longer pink inside.  Remove from skillet and set aside.  Meanwhile, melt 4 tbs butter in the skillet.  Saute onions, 2 garlic cloves and mushrooms until onions are transparent.  Stir in flour, salt and pepper, cook for 2 minutes.  Slowly add milk and half-and-half, stirring until smooth and creamy.  Stir in Parmesan and Colby-Monterey-Jack cheese, stir until cheese is melted.  I then added my sour cream to the mix.  I drained my pasta and placed it back in the pot.  I added my chicken and then cream mix on top.  Done.  Now, enjoy!

chocolate peanut butter banana muffins

I've mentioned before that I am totally obsessed with recipes from Mix and Match Mama.  You are probably thinking I should stop stalking and start cooking things from other places.  I just can't pull myself away.

Trav and I got home yesterday from a long weekend away in Wintergreen, VA.  We had a mini-vacay with some friends and it was exactly what the doctor ordered.  Be prepared for a huge post about our weekend in the near future.

Ok, back to these delicious muffins.  I made these for our trip and they were incredible.  MMM never disappoints.

Whatcha Need:
2 cups all purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup mashed bananas
1/3 cup milk
1/3 cup creamy peanut butter
3 tablespoons vegetable oil
1 egg
1 cup chocolate chips

Preheat oven to 350 degrees

Combine flour, sugar, baking powder and salt in mixing bowl.  Add bananas, peanut butter, oil, milk and egg.  Stir until moistened.  Add chocolate chips.  Put mix in tin. (I made 6 large muffins.)  Bake 25-30 minutes or until toothpick comes out clean.

ENJOY!  (Seriously ah-mazing!)

kraft goodness

Y'all, talk about easy cookin'.  We are addicted to Kraft's Fresh Takes.  It's a cheese and breadcrumb mix.  They have about 4-5 different mixtures and they are all delicious.

All you do is add your meat (you can use any meat) to the mix and then bake.  Seriously?  Seriously.  So easy and so yummy.  Right up my ally.  I find myself grabbing these when the day has slipped away from me and all of a sudden I realize it's close to dinnertime..

provolone meatballs

I've never been a huge meatball fan but these were delicious!  And most importantly, they were easy.  This is another Mix-and-Match Mama recipe.  I'm loving her stuff so far.  She's a mother of two young kiddos so all of her recipes are fairly easy and quick.

Whatcha Need:
1 pound ground beef (or use ground chicken or turkey)
1/2 onion, grated  (I cut my onions)
4 cloves garlic, grated  (I used garlic salt)
1 cup Panko (which is Japanese breadcrumbs or substitute with your favorite breadcrumbs, we substituted)
1/2 cup Parmesan cheese, grated
2 eggs, beaten
2 splashes milk
1 teaspoon crushed red chili pepper (optional, I didn't use any)
4-6 ounces Provolone cheese
Lots of salt and pepper
Extra Virgin Olive Oil (EVOO)

Preheat oven to 425 degrees

In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, Parmesan, eggs, milk, crushed red pepper and lots of S&P.  As you roll one into a ball, take a piece of your provolone and stick it in the center, rolling the meat mixture all the way around it and then place on a lightly greased baking pan.  I timed it just right so that Asher was going down for nap while I was rolling the meatballs.  I needed to make sure I had time to get down and dirty. I then lined my pan with foil.  Last drizzle about a tablespoon of EVOO over all of the balls.  Cook in the oven about 20 minutes or until brown.

Serve meatballs over spaghetti or have them as individuals.

We enjoyed ours with some noodles for a side.

Enjoy!

On most Sunday nights, you can find us out my parent's house.  We all go over to hang out and enjoy Mom's delicious cooking.  I supplied the dessert this past weekend.  Simple S'mores.  Easy and yummy.

Whatcha Need:
marshmallows
chocolate
graham crackers (or buy the crumbs)
skewers

Crush the crackers, melt the chocolate, dip the marshmallows and eat.

pizza joes and corn

Pizza Joes?  You mean sloppy Joes?  Well, kinda.  I got this recipe from Mix-and-Match Mama.  I wish I could say that I just stumbled upon her blog but that would be a lie.  A big fat lie.  You guys hear me talk about my BFF, Lauren, all the time right?  Well, have I mentioned that she is a total celebrity stalker??  To the extreme, I'm afraid.  A while back, she sends me an email with a picture of Sean (from the Bachelorette) and his niece.  Side note:  We both love love love Sean and are still upset over his departure.  Anyways, back to the photo...You can tell it's a personal picture.  My first thought was "how in the heck did she get this picture!"  Come to find out, she follows him on Twitter AND now reads his sister's blog.  Figure it out?  His sister is Mix-&-Match Mama.  I cannot let her be the only top Sean fan.  I now follow him on Twitter, Instagram and read his sister's blog daily.  Thank you Sean's sister for this delicious recipe!!

Pizza Joes:  (simple, quick and easy)

Whatcha Need:
1 pound beef, chicken or turkey
1 tablespoon Italian seasoning blend
1 chopped onion
1 jar of pizza sauce
1 cup of pepperonis (we used regular size)
1 cup Mozzarella cheese
Buns (optional)
Extra Virgin Olive Oil (I didn't use any oil.)

MMM says, In a large skillet over medium-high heat, preheat a few tablespoons of EVOO. Add in your ground beef and cook until crumbly. Stir in seasoning and onions and continuing cooking 5-6 minutes. Stir in pizza sauce and pepperonis and reduce heat to a simmer for about 10 minutes. Serve Sloppy Joe mixture open-face style over a burger bun and top with cheese.

I didn't have any EVOO, oops.  I added my onions in as my meat was browning.  I then followed the rest of her instructions.  We don't ever buy buns, we can never eat them quick enough to be worth it.

This meal was super simple and tasted great!  We both enjoyed it and will be making it again.

We never go big on our sides.  We normally have one side sometimes two.  I'm telling ya' we are simple eaters.
One side that we love and have often is my Momma's Corn.  I'm not sure where she came up with this but it is delicious!

Whatcha Need:
1 roll of white creamed corn
1 bag of golden sweet corn

That's it!
Put both in a bowl and stick in the microwave for about 15 minutes.  Checking about every 5 to mix.

Done and delicious!

Thanks Mix-and-Match Mama and my Momma !
Enjoy!

yummy granola

Wanted to share this easy and delicious granola recipe. My sister, Summer, got this recipe from her husband's cousin. Travis and I decided to make it this weekend.

What You Need:
1 ripe banana (mashed)
1.5 c oats
1/2 c chocolate chips
1/4 c maple syrup
1/2 c peanut butter
1/4 c coconut oil

2 to 4 scoops of protein powder

(Ours turned out a little more peanut buttery then it should. I goofed when reading the instructions. Oh well, it was delicious anyways.)

What You Do:
Mix all the ingredients together.
Spread into a dish.
(You do not have to put mix into a dish. You can make yours into bar size and layout on wax paper. Your choice.)
Cut into squares.
Put in freezer to harden.
Eat. Enjoy.

Very easy and yummy treat to enjoy.
Thanks Sum for the recipe.

a good day

Saturday was a great day.  We woke up and enjoyed a yummy breakfast.  Travis fixed his specialty, pancakes!  Around noon we headed out for the day.  Travis meets every Sunday night with a Men's Bible Study group.  It is led by a Dr. Libby, a local orthodontist, it is for male dental students.  He offered us tickets to the Regions Morgan Keegan Tennis Tournament that is here in Memphis for the week.  Friday-Sunday are qualifying rounds.  We went around 2:00 and walked around for a little while.  There were several different matches going on, we watched Donald Young (USA) vs. Teimuraz Gabashvili (RUS).  It was a good match.  Young won with a tie breaker.  Maria Sharapova will be playing tomorrow night and Andy Roddick on Wednesday.  Travis and I are planning to go back on Friday for the finals.  We are hoping they will both be there.

Mom and I at the Racquet Club.

After the match, we ran a few errands, and then picked up somethings to make our Valentine's dinner, meatloaf!  Travis had mentioned awhile back wanting me to make some.  I was nervous to make it alone.  So since Mom was in town it was the perfect time.  I know that everyone uses different ingredients in theirs, but this is what Mom and I used...

2 lbs of meat
2 eggs
1 pack of saltine crackers
2 cans of tomato soup
1 pack of meatloaf seasoning
ketchup (as much as you like)
dash of basil, garlic salt, and Lawry's Seasoning Salt

Getting started...

We quickly realized that we were going to need a much bigger bowl.  We mixed everything together...

After mixing everything together, you put them in 2 loafs, and then put some ketchup on top.  Let it bake in the oven for about and hour on 400.
It might not look the best but it sure does taste absolutely delicious!!  I am not tooting my own horn, but this was the best meal that I have ever made.  I was/am very proud of myself.  I'm finally starting to get a hold of this thing they call cooking.

We had broccoli, cream corn, and a wonderful salad to go with it.  For dessert, I made a yellow cake with chocolate icing shaped like a heart.  In the spirit of Valentine's Day of course.

After dinner I told everyone to close their eyes.  I put all of their Valentine's Day gifts in their laps.  I don't like the traditional Valentine's Day gifts.  So, I painted a canister for Dad to keep his peppermints in, gave Mom the new Lady Antebellum cd (which is amazing by the way), and Reecie got a new bone!  Travis and I said that our gifts to each other was Jersey Boys but I didn't want him to be left out, I gave him a new pair of boxers and some Reese cups.  I think everyone was satisfied with their things...

I really enjoyed painting this for Dad.  I think it turned out pretty darn cute!

I liked it so much that I painted one for myself...
It is holding my wooden kitchen utensils.

We had a great weekend with my parents.  I realize how much I miss living close to them every time they pull out and head home.  We love you both!!
